Taiki Tea matcha mousse with raspberries and grated cocao

These delicious vegan desserts taste as good as they look. Literally whip them up in a few minutes for a tasty treat. 

Ingredients - makes 2 servings

50g of cashew nuts

1 very ripe banana (frozen if possible)

1 ripe avocado 

2 teaspoons of Taiki Tea matcha powder 

50 of nut milk of your choice

100g raspberries

Raw cocao (we like Willie's Pure Gold 100% Cocao

Method 

  1. Soak the cashews for at least 5 hours in water
  2. Drain the cashews and add the nut milk and blend until smooth
  3. Add the avocado flesh, frozen banana and matcha and blend until creamy
  4. In two small glasses/ramekins layer the raspberries and mousse mixture 
  5. Top with raspberries and some grated dark cocoa
  6. Can be served immediately if using frozen banana, or simply place in the fridge for 30 mins to chill
